Much thought and planning has gone into the design of modern kitchens and given such design the care is relatively easy but many hotels, schools restaurants, hospitals and homes have to function with grossly inadequate arrangements. The walls, ceilings and floors should be kept clean, so also should cupboard tops, sinks and draining boards. The later are preferably made of stainless steel, porcelain or plastic materials. There should be adequate arrangements for the discharge of used water and a supply of reliable water. Hot water is a distinct advantage and may be provided by means of a heating unit above the sink. Provision should be made for the salvage of waste food. In cities and towns .it may be collected regularly for the feeding of pigs-the container used must be kept clean and covered and care taken not to put anything in it that would endanger the health of the pigs.
Rubbish bins should not be kept in the kitchen. A good detergent and hot water is best used for washing up, care being taken not use it too strong so that it damages the skin. The use of hot clean water for rinsing (used in conjunction with a draining board and plate rack) is an advantage. Dish cloths and mops should be kept clean frequently boiled and regularly changed. Lighting should be adequate. Table tops of plain hard wood should be kept very clean but many materials- enamel, Formica are now being used most successfully to cover them. Oven saucepans, cooking utensils should be kept clean and in good repair. All these things apply equally to small and large kitchens but in large kitchen it is usual to have separate sink units for dealing with vegetables. For rinsing, very hot water is used, so that plates etc dry readily on draining racks or alternatively washing machine may be used especially in hotels.
It is usual in large kitchens to need some form of steam extractor and in very large kitchens some form of artificial ventilator. Walls and forms are best tilled or made of a hard material which is easily washed. There should be adequate facilities for emptying water used for scrubbing the floor it should not be tipped down the kitchen sink.
